Soil : Molasse (a soft, crumbly sandstone)
Grape variety : Viognier
Pruning method : Guyot
Average production : 60 hl/ha
Winemaking : Harvested mid-october. Alcoholic fermentation at cool temperature (18°C) followed by malolactic fermentation. Stored in stainless steel tanks. Cold stabilisation and filtration achieved by early March. Bottled in April
Characteristics : Light colour, aromas of mango and apricots, rounded full body.
Strength 14% ABV
Gastronomy: Fish, lobster, poultry, goat cheese, Japanese dishes.
Best time to drink : Now and up to 2-3 years after vintage.
Service temperature : 9-10°C
